Dehydration is the oldest form of food preservation and the simplest. From ancient mariners on long voyages to wandering nomads, dried foods were essential.
It is important when considering a dehydrator to purchase a dehydrator that has an adjustable thermostat. Valuable enzymes and essential nutrients are lost if food is dehydrated over 116 degree F.
Many dehydrators do not have an adjustable thermostat (One tested from a local store was non-adjustable and set at 170 degrees!).
These dehydrators have built in thermostats so you can control the temperature from 85 degrees on up.
I suggest dehydrating at about 140 degrees for the first hour, then reducing the heat to about 105 degrees. It may take a little bit longer, but you will preserving vital enzymes and nutrients in the food.
By starting at 140 degrees, you will reduce the risk of bacteria growth. The food will not reach 140 degrees.
To monitor the temperature inside the dehydrator, I recommend a Digital Thermometer/Timer.
It allows you to see a digital readout of the temperature inside the dehydrator without opening the door. It also allows you to set a timer to count down so you will know when your food is done.
These dehydrators do not have built in timers.
I suggest purchasing a standard appliance timer (the kind that turns off and on your lights when you are on vacation and runs about $5-$10) at a local store (such as home depot, radio shack, walmart, kmart, ace hardware, etc)
