After reading about the health benefits of unpasturized lactic acid-fermented vegetables, we were convinced that adding them to our diet would be a beneficial step.
Sauerkraut is hard to find unpasturized and other vegetables are virtually unobtainable.
So we set out to ferment our own with memories of skimming slime from past experiences.
Thus we were delighted to discover a new fermentation crock manufactured by Harsch, a German company that has a patented gutter and lid which creates a water seal that does away with the need for constant cleaning.
The Harsch crock makes it easy for you to ferment and eat fresh, locally grown vegetables. It eliminates the need for the skimming of kahm yeast, a white slimy substance that forms on the top of the sauerkraut where there is access to fresh air.
While the kalm is not in the least harmful, it is disgusting, and it is so nice not having to wash the cloth, board or stone covering on a regular basis during fermentation.
Kept in a cool place, the Harsch crock can be left alone for months while the vegetables inside get better and better.
The only chore that these crocks demand is that you occasionally top up the water in the gutter that seals off the contents from the outside air.
The Harsch Fermentation Crocks are covered with a lead free glaze and are very easy to clean.
They feature sturdy carrying handles that add to the stability of the gutter by acting as buttresses.
The crocks come with two small, semicircular, stoneware "weight stones" that are designed to rest on top of the vegetables to create the pressure needed for fermentation, and to protect the food from decay.
With the Harsch Crock there is no need for the traditional paraphernalia of cloth, board or stone, and best of all the kahn yeast no longer forms. Simple instructions with recipes are included with the crocks.

A few months ago I ordered a Harsch crock from you and I've been making kraut ever since. I neglected to take a few minutes to say thank you. I wanted to let you know that I ADORE my crock and wouldn't be without it. At some point in
the not-so-distant future, I will add a second one so I can have different recipes fermenting at the same time!

Health Benefits of Fermented foods
